Our girl just hit another childhood milestone. Braces. And, if you have a kid with braces, you know that finding healthy, non-sticky, non-sugary, overly processed snacks you can throw in their backpack is a challenge. Not to mention, most schools and camps are nut-free since nut allergies have become so commonplace in the last decade or so. Fall has arrived and all of the Halloween activities have me craving pumpkin everything, from pumpkin lattes to baked goods. With our daughter still on a Low FODMAP diet, my old standby recipes won't work. So, I modified one of our favorite pumpkin desserts to meet the diet criteria and successfully turned out a healthy version. This yummy pumpkin cake is low in sugar and gluten-free, yet so delicious! Christina has been a real trooper about sticking to her elimination diet (probably better than most adults) and hasn't gotten too upset about not being able to eat desserts, EXCEPT when it comes to attending birthday parties.
