Elimination Diet Tips for Kids: Lemon Blueberry Cake
Christina has been a real trooper about sticking to her elimination diet (probably better than most adults) and hasn’t gotten too upset about not being able to eat desserts, EXCEPT when it comes to attending birthday parties. That is another story. She has shed a few tears over the fact that it’s “not fair”…. and it’s not. All of you moms dealing with similar situations, be it special diets or food allergies, can totally relate I’m sure. To help ease the pain a little, I came up with a cake recipe that she loves and takes with her to parties and sleepovers, so she has a “treat” to eat like the other kids. Okay, it’s not a cupcake or slice of heavenly chocolate cake with buttercream icing, but it does the trick and it’s healthy!

Lemon Blueberry Cake
1 cup coconut milk
1 ¼ cups unsweetened organic applesauce
3 tablespoons of cane sugar*
¾ cup fresh squeezed lemon juice
¾ cup olive oil
2 tsp. vanilla extract
*Pure cane sugar was deemed okay on her specific elimination diet, but no honey, agave syrup or any other sweetener.
Blend above ingredients well with mixer, then add dry ingredients.
1 cup of gluten-free flour
1 cup of gluten-free oat flour
1 tsp. baking soda
Fold in 1 cup of blueberries (fresh or frozen organic works). Pour into 10×10 pan greased with olive oil and sprinkled with gluten-free flour. Bake at 350 degrees for about 1 hour.
Let cool, then cut and serve or top with vanilla coconut milk yogurt.
