GI Rescue Recipes for Kids: Flourless Chocolatey Chip Cookies

Just in time for Valentine’s Day, these delectable, melt-in-your-mouth treats are sure to be a hit with your family! They are low in sugar, super easy to make, and fit within the Low FODMAP diet restrictions for GI issues. A great option instead of giving store-bought chocolate or candy, and they are seriously delicious.

Flourless Chocolatey Chip Cookies

1 cup almond butter
1 egg
1 Tbsp. strawberry jam (St. Dalfour brand doesn’t have all the additives)
1/3 cup sugar
1/2 cup unsweetened cocoa powder
1 tsp. baking soda
1/3 dark chocolate chips (lower in sugar than milk chocolate – Enjoy Life brand is our go-to)

Preheat oven to 350 degrees.

Mix together sugar, cocoa powder and baking soda, and set aside.

Mix almond butter, jam and egg, then add dry ingredients and stir well. (You can substitute sunflower seed butter for school lunches, but note the cookies are more cakey, less gooey. I use the Trader Joe’s brand of sunflower seed butter, since it doesn’t have any additives. I also added a tablespoon of olive oil to this version, so the cookies hold together better once baked.)

Stir in chocolate chips.

Scoop onto parchment paper-lined baking sheet, and bake at 350 degrees for 10 minutes. Let cool before storing.
